Silken tofu is undrained and un-pressed tofu. It has the highest water content of all types of tofu and is made by coagulating soy milk without curdling it. Silken tofu works well in creamy and blended foods like smoothies, desserts, puddings, salad dressings, sauces, and dips. It can also be used as an egg substitute in baking.
